Bacon and Egg Muffin

Ingredients: (Per muffin - multiply each for number of muffins prepared)
2 slices bacon
1 medium egg
i slice bread
salt and pepper
Optional:
thyme, oregano, or parsley

Instructions:
- Spray (really well) a muffin pan
- Partially cook bacon - it should NOT be cooked crisp, but you cook it to render some of the fat - bacon should be pliable (drain bacon on paper towel)
- Using a cookie cutter or small glass, cut a circle of bread to fit on bottom of muffin pan
- Preheat oven to 400 degrees
- Place bread circle on bottom of muffin pan, fit 2 slices of bacon around the sides of the pan (overlapping as necessary) to line the muffin cup
- Break egg and place into center of the muffin pan
- Sprinkle top of each egg with salt, pepper, or optional spices
- Bake at 400 degrees 15-20 minutes until bacon is desired crispness
