Rich’s Roasted French Onion Potatoes
Ingredients
1 lb baby red or Yukon Gold potatoes
I large onion, thinly sliced
I pkg. dry Onion Soup / Dip Mix
1 tsp Olive Oil

Instructions:
- Preheat oven to 425 degrees. Line a baking pan with aluminum foil and lightly spray with non-fat cooking spray.
- Wash and scrub potatoes, cut into quarters or bit sized pieces
- Place all ingredients in a large Ziplock bag, shake well to evenly coat the potatoes and onions.
- Pour onto baking pan and spread evenly. Sprinkle with salt and pepper. Place in oven for 30 minutes or until potatoes are browned and soft.
