Becky's Crock Pot Fajitas
Ingredients:
2 lbs. boneless, skinless chicken breasts
1 (14.5 oz.) can of tomatoes with green chili peppers or fire roasted tomatoes
3 green Bell peppers cut into strips
1 large yellow onion cut into thin strips
2 cloves minced garlic
2 T Taco seasoning
½ tsp salt
½ tsp pepper
Preparation:
2 lbs. boneless, skinless chicken breasts
1 (14.5 oz.) can of tomatoes with green chili peppers or fire roasted tomatoes

2 T Taco seasoning

Preparation:
- Pour ½ can of the tomatoes into the Crock Pot.
- Top with ½ of the Bell peppers and onions. Sprinkle in garlic and place chicken breasts on top of the vegetables.
- Season one side of the chicken with ½ of the Taco seasoning, flip and season other side.
- Cover chicken with remaining tomatoes and vegetables.
- Cover, cook on low for 6 hours, or on high for 4 hours.
- Remove chicken and cut into strips, or shred.
- Serve with warm tortillas, top with fresh lime juice, or Greek yogurt. Add rice, cheese and other favorite toppings.
