Shepherd's Pie

Easter,2020, was a unique celebration for the Cohrs family, for it was the first time ever that family did not join in for the Easter meal due to the Stay at Home orders. Carol and Rich decided to support a local restaurant for the dinner. They ordered a complete Easter ham dinner from Bob Evans. The meal was fantastic! We received ham, mashed potatoes, gravy, carrots, green beans cooked with onions and vinegar, buttered corn, coleslaw, and a cherry pie! The meal was advertised for "4", but we ate our fill twice and had lots left over.
So, what to do with leftover vegetables, potatoes and gravy?

Ingredients
1 pound ground chuck
3/4 cup chopped onion
salt
pepper
3/4 cup roughly chopped cooked carrots
3/4 cup 1-inch pieces cooked green beans
1/2 cup corn
gravy
3 cups mashed potatoes
NOTE: For gravy we used the gravy from Bob Evans, could also use 1 12 oz. pkg. McCormick Simply Better Beef Gravy mix, or thicken 1 1/2 cups beef stock with a slurry of 4 teaspoons cornstarch and 1 tablespoon water
INSTRUCTIONS:
1 Preheat oven to 375 degrees. Brown ground chuck with onions, salt and pepper to taste in a large skillet. Drain.
2. Combine vegetables, meat, gravy in casserole dish, stir well.
3. Drollop mashed potatoes over the mixture, if they are cold, warm them first.Spread potaoes to edges of dish.
4. Bake for 25 minutes or until gravy is bubbly around edge.
NOTE: The veggies from Bobn Evans were already prepared to bring out the flavor, if using canned or froxen vegetables, consider adding flavor to them first i.e. fix carrots with butter and brown sugar, green beans with bacon, onion and vinegar, and corn iwth butter.
